Flavours of Monash

Ingredients:
- 1 tbls Oil
- 1 Onion - medium
- 2 Potatoes - medium
- 1 Red capsicum
- 1 Green capsicum
- 1 Green chilli seeded, chopped or ¼ teaspoon of chilli powder
- 1 Small skinned tomato, diced
- 1 tsp Salt
- ½ tsp Turmeric
- ¼ tsp Garam Masala
Preparation:
- Prepare vegetables. Slice onions lengthwise, cut potatoes into wedges, cut capsicum into approximately 2cm x 4cm pieces.
- Heat oil in a wok or frying pan. Add onion, fry until changing colour (do not brown).
- Add chopped green chilli, salt and turmeric. Stir well.
- Add potatoes, stir for a minute, cover for another minute and cook.
- Add peppers and tomato, stir, then cook covered on low heat until potato is cooked.
- Add garam masala and stir.
- Garnish with fresh coriander before serving.
