Flavours of Monash

Ingredients:
- 1 Bunch cauliflower, cut into florets
- 1 Bunch spring onion, chopped
- ½ Bunch parsley, chopped
- 6 Eggs
- 3 cups Self-raising flour
- Salt & Pepper
- Oil
Preparation:
- Place cauliflower florets in boiling water, cook until very soft, drain and let cool.
- Break cauliflower with hand in a bowl, add chopped parsley and spring onions, mix well. Add eggs, self-raising flour and salt and pepper.
- Mix into a smooth consistency.
- Heat oil in frying pan. Place spoonfuls of the mixture into the frying pan, cook each side until golden brown.
- Sprinkle grated parmesan cheese on top, if desired.
- Serve hot or cold.
