Cauliflower Patties

Ingredients:
  • 1 Bunch cauliflower, cut into florets
  • 1 Bunch spring onion, chopped
  • ½ Bunch parsley, chopped
  • 6 Eggs
  • 3 cups Self-raising flour
  • Salt & Pepper
  • Oil
Preparation:
  • Place cauliflower florets in boiling water, cook until very soft, drain and let cool.
  • Break cauliflower with hand in a bowl, add chopped parsley and spring onions, mix well. Add eggs, self-raising flour and salt and pepper.
  • Mix into a smooth consistency.
  • Heat oil in frying pan. Place spoonfuls of the mixture into the frying pan, cook each side until golden brown.
  • Sprinkle grated parmesan cheese on top, if desired.
  • Serve hot or cold.
