Coconut Chutney
Ingredients:
- Juice of medium sized lemon
- 1 small onion
- 1 chilli
- 1 tsp of finely chopped ginger
- 1/2 coconut finely grated
- Salt to taste
- 1 dessertspoon of chopped mint
- In the juice of the lemon put the finely chopped onion, chilli and ginger.
- Toss in the coconut and add salt to taste.
- Just before serving add chopped mint and mix well.
