Fasolado
Ingredients:
- ½ Kilogram white beans
- Vegetable stock
- 2 carrots
- ½ Bunch celery
- 3 Onions
- 3 Potatoes
- 2 x 500 Gram crushed tomato
- ½ Cup of olive oil
- Soak white beans overnight.
- Drain beans and rinse.
- Place beans, carrot, celery and onion in vegetable stock and simmer for ½ an hour.
- Add tomatoes and olive oil and simmer until beans are soft.
- Serve with crusty bread.
