Fasolado

Pot
Ingredients:
  • ½ Kilogram white beans
  • Vegetable stock
  • 2 carrots
  • ½ Bunch celery
  • 3 Onions
  • 3 Potatoes
  • 2 x 500 Gram crushed tomato
  • ½ Cup of olive oil
Preparation:
  • Soak white beans overnight.
  • Drain beans and rinse.
  • Place beans, carrot, celery and onion in vegetable stock and simmer for ½ an hour.
  • Add tomatoes and olive oil and simmer until beans are soft.
  • Serve with crusty bread.
